Look at it this way: my kingdom in the SCA has a Guild of Brewers, Vintners, and Imbibers. These guys are serious about their brewing science. They’ve made alcohol out of everything you can stick in a bucket with sugar.
I have never heard of any of them, anywhere, ever, experimenting with cock ale.
(Maybe that’s just because it’s outside the SCA period. Yeah, that’ll be it. Of course.)
