don’t ship the fish sauce! even better with shrimp paste or salty crab paste. very pingent, spicy and flavorful!

Any ideas for a sort of crumbled tofu sandwich situation? I’m making hamburger buns, but didn’t want to do the usual turkey sloppy joes. Thoughts? Suggestions?
Okay… here is what I’m trying… a sort of BBQ type sauce… ketchup, apple cider vinegar, worchestershire, honey and brown sugar, smoked paparika, red pepper flakes, and some gochujang mixed up, and poured on the crumbled tofu.
Then I’m gonna cook up some garlic, onions, and peppers, then add the bbqed tofu to the pan…

what type of buns did you make? brioche? kaiser? fluffy, or sturdy? a really saucy filling needs a bun that can contain it.

I’ve made it a couple of times. It’s at least as good as store-bought vegan chorizo (e.g. from Trader Joe’s which, I thought, was already pretty good). I did not skimp on the vinegar.
