I posted this in the other place a couple of years ago - I made black lime tofu, and honestly, I’ll take any chance to post it again it wa so good. The dried limes smell wonderful and have an intense sourness.
I’m not sure about the logistics of doing it at home - they’re notionally dried in the sun after a light salting, but a dehydrator might work.

interesting. those limes are really large for key limes.
here - in the keys - they are quite small, around 3-4cm in diameter and loaded with seeds.
a real PITA to juice enough of them for a pie, but worth it!
That bowl is basically the size of a small cereal bowl, and the lime you see later I had bought as I was worried these tiny ones wouldn’t make enough juice, but all of them made almost a 1/2 cup, so I didn’t need it
It came out very nicely, I just don’t know the next time I’ll see some key limes around here, they’re not a regular occurrence.

I don’t know if i posted about this particular gin before. I thought about it when i bought it a month ago, does that count?
But Gin di Fiori (Blood Orange) is fabulous. Very similar to a gin i got previously that had some kind of Spanish citrus, its pleasantly citrus-y. Love it. Get it.
It’s not as herbal-y as other gins, citrus is the overriding flavor with faint botanical notes
Have not found SYM seasoning here in San Francisco yet.
