Did you know flamingo tongue was a Roman delicacy? I have no idea if it was at all pleasant to eat, but it was expensive as hell, and that kind of ostentation was very popular among the wealthy.

Weird… I guess some people still eat cow’s tongue, too, but I don’t think that’s what that is? Maybe it’s a cut of fish of sometime, sushi style?
But either way, the whole thing looks like what a person who has never been to a high end restaurant would assume that that’s how a michelin star NYC restaurant would plate stuff… “just put some peas around the bottom… yeah, that’s how they’d do it at Daniel’s…” (insert name of NYC Michelin restaurant here)…
