IIRC pine martens find grey squirrels to be easier prey than red ones. Biggest issue is that pine martens are pretty rare…

Eating the entire squirrel, especially the brains, was linked to a case of Creutzfeld-Jacob disease in the late 1990s in Kentucky.
Squirrels are often roadkill. RFK Jr claims to have eaten roadkill.
